Diced Tomatoes in Juice

Pan Seared Chicken with Roasted Asparagus, White Rice, and Food Cravings Salsa
Pan Seared Chicken:
Serves Two
2 tbsp. olive oil
2 chicken breasts, approximately 6 oz. each
4 tbsp. Food Cravings salsa
Salt and pepper to taste
Pre-heat oven to 375 degrees. In a medium non-stick skillet, add olive oil to skillet over medium to high heat. Season chicken with salt and pepper and place in skillet. Sear chicken for 2 minutes on one side, then turn chicken over and cook for another 2 minutes. Place chicken in oven proof container or small sheet tray and continue to cook in oven for 15-20 minutes or until done. Once done, place on plate with Food Cravings salsa on top.
White Rice
1 cup white rice
2 cups water
2 tbsp. butter, melted
Salt and pepper to taste
Cooking procedure:
In a medium pot, add rice, water, and butter. Cover pot with lid, bring to a boil then simmer for 20 minutes. Remove from heat, let stand for 5-7 minutes or until water is absorbed. Fluff with fork, add salt and pepper to your taste.
Roasted Asparagus
1 bunch asparagus, rinsed with bottom stem cut off
2 tbsp. olive oil
2 garlic cloves, chopped fine
Salt and pepper to taste
Cooking procedure:
Pre-heat oven to 375 degrees. Mix asparagus with olive oil, garlic, salt and pepper. Place evenly on oven proof container or small sheet tray. Cook for 5-10 minutes or until done.

Sautéed Shrimp with Garlic, Lemon and Food Cravings Salsa
2 tbsp. olive oil
2 garlic cloves, chopped fine
10-12 medium to large sized shrimp (26/30), peeled and deveined
Half lemon
6 tbsp. Food Cravings salsa
Salt and pepper to taste
Cooking procedure:
In a medium sauce pan, add olive oil over medium to high heat for one minute. Add garlic and shrimp, then stir for 2 minutes with a wooden spoon. Reduce heat to medium. Take the half lemon and squeeze the juice over the shrimp through a strainer to make sure no seeds go into the pan. Continue to cook shrimp for 6-8 minutes, stirring occasionally until shrimp turns pink. Add Food Cravings salsa and cook for approximately 2 more minutes or until done. Season with salt and pepper.
Tip:
You can garnish this dish with a sprig of cilantro.
